Simple Couscous Recipe

This recipe was actually created because I was putting the last products from the refrigerator together to see if I could make a decent supper out of it or that I had to make a quick visit to the supermarket. Because I had couscous at home I came a long way and it tasted very good, the result; a simple couscous dish.

Simple Couscous RecipeThese were the last products out of the refrigerator. The bacon could have been more to my taste but unfortunately I had no more bacon, the above ingredients are certainly enough for 4 people.

The ingredients.

  • 400 grams Couscous (about 100 grams per person is enough).
  • 1 pack Bacon
  • 1 Zucchini
  • 1 Avocado
  • 1 Onion
  • 4 Eggs
  • 2 Tomatoes
  • 1 clove Garlic

 Preparation.

  • Put the right amount of couscous in a pan with water and salt, the water should come to just above the couscous, Briefly boil for about 2 minutes, turn the gas off and then let it swell for about 10 minutes with the lid on the pan.
  • Meanwhile cut the onion, zucchini and tomatoes into pieces.
  • Put some olive oil in a frying pan, fry the onion and add the pressed garlic.
  • Add the sliced zucchini and tomatoes to the onion and garlic and fry it well.
  • In the meantime the couscous has taken up all of the water after 10 minutes (if not then you pour off the couscous).
  • Then place the couscous in another frying pan with olive oil and fry it.
  • Then add the eggs and bacon in the couscous, stir well so that the egg is completely included into the couscous.
  • Add the mixture of onion, garlic, zucchini and tomatoes to the couscous and mix well into the pan.
  • Finally add some pieces of avocado per plate and season with salt and pepper.
