Courgetti, or zucchini spaghetti, is healthy and delicious. The zucchini spaghetti is very easy to make with a spiral cutter, when you don’t have it at home you can buy the zucchini spaghetti fresh at your supermarket. This spaghetti is super fast, because you only need to cook or stir fry the spaghetti for a few minutes. Of course with this spaghetti you already eat vegetables, but it’s nice to add some extra vitamins.
Recipe Zucchini Spaghetti.
What do you need (4 people).
- 400 grams of zucchini spaghetti (or 1 in 2 courgettes)
- 500 grams of minced beef
- 2 cloves of garlic
- cherry tomatoes
- 250 grams of ricotta cheese
- pine nuts
- pepper and salt
Preparation.
- Cook the meat together with the squeezed garlic cloves and pepper and salt.
- Stir in another pan the zucchini spaghetti with some olive oil and salt.
- Halve the cherry tomatoes and add to the minced meat.
- Add the zucchini spaghetti to the minced meat.
- Roast the pine nuts in a dry frying pan.
- Spoon into deep plates and garnish with the ricotta cheese and pine nuts.
