Recipe Superfood Soup

After all the Dutch Doughnuts (Dutch tradition), snacks and drinks from the past few days, in early January it’s time for some healthy food on the table. I love homemade soup and basically never eat canned soup. This recipe has an Asian flair because where else in the world they understand healthy food better. The recipe is a variant of my similar Recipe Noodle Soup which is a milder flavor. The recipe below is more spicy because of the cloves and chili peppers. Nowadays I have my groceries delivered at home and unfortunately the shiitake mushrooms were out and I had to use regular mushrooms. I also ordered large prawns in a pack of 300 grams, but I had to use a pack of 100 grams.

Why the name superfood?

  • Garlic has a positive effect on your cholesterol and blood pressure and gives your immune system a boost. 
  • Ginger helps to remove toxins in your body. It cleanses your liver and provides energy.
  • Pak choi is one of the healthiest vegetables and is packed with vitamins and minerals.
  • Shiitake works well against bacteria, fungi and viruses, making you less susceptible to disease.
  • Shrimps are rich in zinc and are therefore good for your skin and your hair. They also contain lots of omega 3 fatty acids, viamine B12, minerals, calcium and protein.
  • Sesame seeds contain a lot of calcium, amino acids and tryptophan. Also, it contains a high content of the vitamin B complex.
  • Spicy food (chillies) gives your metabolism a boost and improves your bowel movements. It can also lower your blood pressure by strengthening your arteries.
  • Clove contains vitamin C and K and is a strong antioxidant. It also has an antibacterial effect and may in particular relieve toothache and bad breath.

What do you need (4 persons).

Recipe Superfood Soup

  • 2 liters chicken stock
  • 250g Chinese egg noodles
  • 300g prawns 
  • 100g smoked salmon
  • pak choi
  • 100g shiitake
  • 2 eggs
  • piece of ginger (3cm)
  • 2 tablespoons soy sauce
  • 2 cloves garlic
  • 1 large carrot into thin sticks
  • 4 spring onions
  • 2 tablespoons sesame seeds
  • 6 cloves
  • 6 chillies (dried)

Preparation.

  • First boil the eggs in four minutes and keep them separately.
  • Put 2 liters chicken stock in a large stockpot and add; 2 tablespoons soy sauce, ginger into thin slices, the 2 garlic cloves crushed, 6 cloves and 6 chillies. Bring to a boil and let it slowly boil for 20 minutes.
  • Strain the broth.
  • Cook the pak choi, shiitake, carrot, shrimp and egg noodles briefly in the broth so that the vegetables remain crisp.
  • Sprinkle the spring onions, sesame seeds and the smoked salmon into pieces as a topping when you serve the soup.
  • Finally you put half an egg per person on top of the soup.
