Recently, I let more and more groceries delivered at home, especially on Saturday I don’t go to the supermarket. Too busy and many articles aren’t re-supplemented on time. If you don’t feel like spending time in the kitchen this weekend, but you would like to put a healthy meal on the table, the recipe below is just right for you. You can eat it for lunch, but it’s also filling enough for dinner.
Recipe Spinach Omelet with Salmon.
What do you need (4 people).
- 6 eggs
- 200 grams of smoked salmon
- 200 grams hüttenkäse (cottage cheese)
- pine nuts
- fresh spinach
- fresh chives
Preparation.
- Whisk the eggs in a bowl and add some pepper and salt.
- Bake the spinach (as much as you like) in a large frying pan.
- Meanwhile, toast the pine nuts.
- Mix the eggs through the spinach and bake it together into an omelet.
- Put the slices of smoked salmon and cottage cheese on the omelet.
- Finish with the roasted pine nuts and fresh chives.
When you make this for 4 people you can do the exact same in two large frying panes at the same time. Cut the omelet in half and roll up.
