In Asia people eat rice soup for lunch or even for breakfast. The rice soup (Khao Tom) always contains a combination of lemongrass, ginger, coriander and coconut milk. It’s a dish that’s very easy to make because you put everything in one pan and you just have to cook it for a little while. You can make it with pork or chicken, but also with fish. I made the rice soup with shrimp and show you the recipe.
Thai rice soup with prawns.
Ingredients (4 persons).
- 1 liter broth (chicken or vegetables)
- 500ml coconut milk
- 300 grams of basmati rice
- 400 grams of raw and peeled shrimps
- 100 grams of shiitake
- 150 grams of chestnut mushrooms
- 2 cloves of garlic
- 2 cm piece of ginger
- 1 tablespoon fish sauce
- 15 grams of fresh coriander
- 2 stalks of lemongrass (sereh)
- 3 stalks spring onion
- optional: Thai red curry
Preparation.
- Chop the ginger finely, crush the garlic cloves and slice the spring onions and lemongrass into rings.
- Put everything in a pan with 1 liter of broth and bring to a boil.
- Cut the mushrooms and shiitake into pieces and add to the broth.
- Add the coconut milk, shrimp and rice and boil until the rice and shrimp are cooked.
- Finally you add a little fish sauce for more flavor and salt.
- When serving, add the fresh coriander as a topping.
The rice is a complete meal, but you can serve it with some bread or a salad. The lemongrass rings give a delicious fresh bite to the soup. The coconut milk makes the soup very soft of taste, but you can spice up the soup by adding some Thai red curry to the soup as a final step.
