Curry is an Asian dish that you can vary endlessly, with meat or vegetarian and mild or spicy. This curry recipe is fairly mild in flavor and therefore an ideal dish for the whole family. If you want to add some more color or spice it up a little bit, just add some turmeric. The curry is well stocked, easy to make and is quickly on the table.
Recipe Sweet Potato Curry.
Ingredients (enough for 4 people).
- 500g Sweet potatoes
- 450g Thai chicken cubes
- 600g Basmati rice
- 2 cans / packages of Coconut milk 250ml each
- 1 Bok Choy
- 1 clove Garlic
- 1 cm Ginger
- Garnish fresh Coriander
- Optional 1 teaspoon Turmeric
Preparation.
- Cook the rice according to package directions.
- Fry the chicken and peel and cut in the meantime the sweet potato into cubes.
- Squeeze the garlic and cut the piece of ginger into thin slices.
- Add the sweet potato, garlic and ginger to the chicken.
- Cut the bok choy into pieces and add it to the mixture for the last few minutes.
- Finally add the 2 cans of coconut milk, bring to a boil for about 5 minutes.
- Bring the mixture to taste with salt.
- Serve the rice in four bowls and spoon the curry over it.
- Garnish with fresh coriander.
