Shak what? Shakshuka is a single pan dish that’s eaten a lot in North African and Arab countries. You can vary it endlessly, but the original version is made with eggs that are poached in a spicy tomato sauce. If you want some more byte, add some beef or chorizo pieces to the pan.
Recipe Shakshuka.
The recipe isn’t only very simple, but it’s also healthy. You make it with fresh tomatoes and you can eat it at any time of the day. In many countries it’s eaten as breakfast or lunch, but because the food is so nutritious it’s also perfect for dinner. Nice to serve with bread, sourdough bread for example.
Ingredients 4 persons.
- 1 onion
- 1 clove of garlic
- can of tomato cubes of 400 grams
- 4 tomatoes
- 2 bay leaves
- half teaspoon saffron
- 4 eggs
- 1 tablespoon of cane sugar
- pinch of salt
- bunch of fresh cilantro chopped
- 1 teaspoon of cumin seeds
Preparation.
- Put the onion for about 2 minutes in a large pan with a lid on it, squeeze the garlic clove and fry with it.
- Cut the tomatoes into pieces and add them together with the can of tomatoes to the onion with garlic.
- When the tomatoes are tender, add the bay leaves, saffron, cane sugar, salt, coriander and cumin seeds to the mixture.
- Make 4 pits into the mixture and break the 4 eggs it.
- Put the lid on the pan and allow the eggs to poach in the tomato sauce for about 4 minutes.
- Serve with bread.
