Recipe Coconut Soup with Red Lentils

I thought that it was time again to share a delicious and healthy recipe with you. I love soup and usually I make a pretty standard chicken or vegetable soup where I make small variations in. This recipe is a soup I’ve never made and that I’ve come across in the American magazine Clean Eating, it’s a vegetarian coconut soup that’s delicious for lunch or dinner with some bread from the oven. I take you through it step by step how to make this delicious and refreshing soup. What do you need.

Recipe Coconut Soup with Red Lentils

  • 1 tsp coconut oil
  • 1 onion (or 1 cup of chopped onion)
  • 2 stalks celery
  • 4 carrots
  • 2 cloves garlic
  • 2 small pieces of ginger
  • 1 tsp cumin
  • 1 cup fresh coriander
  • 2 cubes vegetable stock 
  • 1 can red lentils
  • 1 ½ can coconut milk
  • 1 lemon

Preparation.

Heat the coconut oil into a stockpot and add the chopped onion, celery and carrots. Stir until the onion has softened.

Cut the 2 cloves of garlic and ginger into small pieces and add to the vegetables. Chop the coriander and also add it along with the cumin. Stir for about 2 minutes.

Add 700 ml of water and 2 vegetable stock cubes and bring to boil. Add the red lentils and cook all for about 10 minutes until the carrots are tender.

As a final step stir through the coconut milk and squeeze a little lemon. If necessary, add a little salt to taste.

This soup is very low in calories and super healthy. Lentils are high in fiber, protein and minerals, garlic strengthens your immune system and ginger is a powerful antioxidant with many vitamins and minerals. Celery and carrots both contain a lot of beta-carotene (vitamin A). This recipe has no meat or fish, but you can optionally add chicken or shrimp to the soup. Garnish with the remaining fresh coriander and serve with some bread from the oven.
