Easter Breakfast Omelet Sushi Wraps

Sushi, who doesn’t love it. I like to eat it with my friends but my kids are also crazy about it (my hubby prefers to skip the raw fish). I always found it too much fuss to make sushi at home until I started looking for a good recipe for Easter. Omelet Sushi Wraps are actually very easy to make and perfect for Easter breakfast (or brunch if you like to start the day a little later). Also nice as a snack on a party.

Easter Breakfast Omelet Sushi Wraps

The easiest way to make these sushi wraps is with a Sushi Kit (Saitaku) that includes sticky rice, rice vinegar, ginger, seaweed and a sushi mat (makisu). But maybe you regularly make sushi at home and you already have everything in your kitchen.

What do you need (2 persons).

  • 3 eggs
  • 1 avocado
  • 2 nori sheets
  • sesame seed
  • 250 grams of sushi rice
  • garlic mayonaise

Preparation.

  • Boil the sushi rice according to the packaging.
  • Whisk the three eggs in a bowl with some freshly ground salt and pepper.
  • Fry the egg mixture into a pan, for a thinner omelet you first bake half the egg mixture and then the other half for a 2nd omelet.
  • Cut the avocado into pieces.
  • Place a sheet of nori on the sushi mat with the rough side up. Put on top the omelet. These two steps you can turn around, so you first start with the omelet and then the nori sheet. This will roll slightly easier.
  • Put the pieces of avocado on the rice with a little garlic mayonaise.
  • Finally sprinkle sesame seeds everywhere.
  • Roll up and cut into pieces.

Serve with pieces of ginger and soy sauce. Enjoy your meal.
