The most popular sandwich from America is still the BLT (Bacon, Lettuce and Tomato). If you don’t feel like having a sandwich you can also make a tasty salad with the same ingredients, think of Subway where you can order most sandwiches as a salad.
To give the BLT salad a bit more bite I’ve made a pasta salad out of it. I made the standard BLT recipe a little more personal by adding some ingredients that I just find very tasty.
BLT Pasta salad.
It looks tasty! The main ingredients (bacon, lettuce and tomato) are there but in addition I’ve added some ingredients for a well-filled pasta salad.
What do you need (4 to 5 persons):
- Penne (500gr)
- Bacon (80 gr)
- Lettuce (250gr)
- Cherry tomatoes (400gr)
- 2 Avocados
- 1 Scallion
- Chives (25gr)
- Mascarpone 250gr)
- Garlic (crushed)
- Grated cheese (175gr)
Preparation.
Cook the pasta in plenty of salted water. Cut the spring onions into rings and halve the cherry tomatoes. Stir-fry the spring onions together with the tomatoes.
I bought (very lazy) fried bacon, but when you buy the normal bacon this is the moment to cook it crispy and then leave to drain on kitchen paper.
Meanwhile, place the mascarpone in a bowl and add salt and crushed garlic. Stir everything together.
Once the pasta is cooked according to the package add it to the onion and tomatoes. Stir the mascarpone through the pasta.
Then add the rest of the ingredients to the pasta. Cut the chives into pieces over the pan. Stir well for a moment on the fire and sprinkle the grated cheese while serving over the pasta salad.
