New Aviko Easy Veggies

Many people eat a piece of meat or fish every day, including in our family. Quite honestly, I often think it’s de best part of my dinner, but it’s also a habit to eat meat or fish every day.

We know that a day without meat is good for your health, the climate and of course the animals. I will probably never become a vegetarian, the term flexitarian appeals to me more. Consciously omit the piece of meat or fish one or more days a week and put a vegetable menu on the table.

I now know that a vegetarian meal can also be very tasty, and with the latest Aviko Easy Veggies line, it’s also very easy to make.

Easy Veggies

With the Easy Veggies, Aviko brings three delicious flavor combinations that are full of vegetables. Falafel, Roasted Corn and Sweet Potato. They are easy to prepare and you can vary endlessly.

Easy Veggie Falafel: falafel, zucchini, green beans, paprika potatoes and herbs.
Easy Veggie Roasted Corn: roasted corn, kidney beans, vegetarian minced meat, red pepper, potato and herbs.
Easy Veggie Sweet Potato: sweet potato, soy beans, red onion, bell pepper, potato and herbs.

You can keep it very “easy” by heating the dish in the frying pan and adding a wrap or pita bread. But you can also make delicious recipes with it. With the Easy Veggie Falafel and the Easy Veggie Roasted Corn, I’ve made 2 delicious recipes that I would like to share with you.

Stuffed bell pepper with Falafel

Aviko Easy VeggiesDish for 4 people, ready in 30 minutes with an oven time of 20-25 minutes.

Ingredients

  • 1 package Easy Veggie Falafel (450 grams)
  • 2 tbsp olive oil
  • 4 red peppers
  • 100 grams of feta
  • oven dish

Preparation

  • Preheat the oven to 200 degrees.
  • Bake the Easy Veggie Falafel in a frying pan over high heat for 5 minutes.
  • Cut the caps off the peppers and remove the seeds.
  • Place the peppers in an oven dish and place the caps next to it.
  • Spoon the falafel dish into the peppers.
  • Crumble the feta above it.
  • Bake the peppers for 20-25 minutes.

Tip; also nice to replace the feta with grated cheese or goat cheese.

 

Nacho dish with tuna, avocado and cheddar cheese

Aviko Easy Veggies

Dish for 4 people, ready in 20 minutes with an oven time of 10 minutes.

Ingredients

  • 2 packs Easy Veggie Roasted Corn (450 grams)
  • 2 tbsp olive oil
  • 1 red onion
  • 1 avocado
  • 150 grams of natural tortilla chips
  • 1 can of tuna
  • 150 grams of grated cheddar cheese
  • 1 spring onion
  • 100 grams of cherry tomatoes
  • 125 grams of crème fraîche
  • oven dish

Optional; jalapeño peppers for extra spice.

Preparation

  • Preheat the oven to 220 degrees.
  • Bake the Easy Veggie Roasted Corn in a frying pan over medium heat for 9 minutes.
  • Cut the onion into pieces or rings. Halve the cherry tomatoes.
  • Halve the avocado, pop out the pit and remove the flesh from the skin with a spoon. Cut into cubes.
  • Put the Easy Veggie Roasted Corn in the baking dish, cover with tortilla chips.
  • Divide the onion, avocado, cherry tomatoes and tuna over the chips.
  • Sprinkle with cheese.
  • Bake the dish for 10 minutes until the cheese has melted.
  • Cut the spring onion into rings and sprinkle over the dish.
  • Serve with the crème fraîche.
