Sometimes you just feel like a plate full of comfort food, you probably automatically think of all kinds of unhealthy food, but comfort food doesn’t have to be unhealthy, with this recipe you get the feeling what comfort food is intended for and at the same time you get the necessary vitamins and eating healthy.

This is what it looks like! Grilled vegetables with 3 kinds of cheese.

What do you need?

Healthy Comfort Food Recipe ca. 400g chicken breast
• 1 Zucchini
• 1 onion
tray Mushrooms
tray Cherry tomatoes
ca. 350g Cauliflower
jar Tomato sauce
1 large Mozzarella
• three slices Cheddar cheese
1 pack grated Cheese
• 1 pack of white Rice
• Olive oil
• Salt
crushed Garlic
Baking paper sheet

The above amount is for 3 to 4 peopleAs you can see I made it easy for myself by getting sliced chicken breast and onion ;).

How do you make it?

Preheat the oven to 200 degrees. Cut the zucchini into pieces and cut the cherry tomatoes in half, put this together with the cauliflower florets on a baking sheet with baking paper, sprinkle some salt and crushed garlic over it. Grill the vegetables for 30 minutes in the oven.

While the vegetables are grilled slice the mushrooms and cook them together with the sliced chicken and onion in a pan with a little olive oil.

In the meantime cook the rice according to the package.

Remove the vegatables after 30 minutes from the oven and set the oven back to 180 degrees. Put the cooked mushrooms, onion and chicken together with the grilled vegetables in a baking dish and cover with mozzarella pieces. You don’t need to add more salt because the cheese that comes on top is salty enough.

As a final step, add the tomato sauce, the slices cheddar cheese and the grated cheese on top off the grilled vegetables, then put the baking dish for about 25 minutes in the oven at 180 degrees.

I serve it with rice but it’s also tasty with boiled or baked potatoes.
