As the warm weather doen’t really wants to come to the Netherlands I thought it was time for a nice comfort food recipe. Lasagna, young and old love it, but every variant of lasagna you probably already know; classic lasagna, vegetarian lasagna, lasagna with salmon, you name it. Some time ago I came across a lasagna soup recipe on Pinterest and quite honestly that one was new for me, I’ve given it a bit of a twist of my own and want to share this delicious recipe with you.

How tasty does this looks? I’ll show you step by step how to make this recipe.
What do you need;
The list below is enough for a large pot of soup, you can eat 2x for 4 people.
- 500 grams of pasta shells
- 500 grams of minced beef
- 350 grams of tomato sauce
- 3 cloves garlic
- 1 onion sliced
- 2 teaspoons oregano
- 2 bouillon cubes (optional)
- Half a bucket of cherry tomatoes
- 2 or 3 bay leaves
- 3 mozzarella balls
- 250 grams of ricotta
- 100 grams of grated parmesan cheese
- fresh basil
Preparation.
- First mix the ricotta with the Parmesan cheese together in a bowl, optionally add a little salt and pepper to taste.
- Boil the pasta in plenty of water with the 2 bouillon cubes.
- Put some olive oil in a pan and fry the beef until it is brown.
- Add to the ground beef the 3 pressed garlic cloves, sliced onion and oregano.
- Then add the tomato sauce, cherry tomatoes and bay leaves to the mixture.
- Let this boil for a while and then add it to the pan with pasta.
- Stir well and cook for a few minutes.
- Serve as a topping with a generous tablespoon of the mixture ricotta and Parmesan cheese a bowl, on top of that a number of pieces of mozzarella and finish with some basil leaves.
- Serve the soup with some bread and herb butter.
