Chicken and Broccoli, my kids love it, but just chicken, broccoli and rice or potatoes is also a bit boring. That’s why I like to make casseroles out of it, that’s also healthy and just a bit less boring (and much tastier). Chicken with Broccoli Casserole, I serve this dish with brown rice, but of course you can also add white rice or baked potatoes.
What do you need?
This amount is enough for 3-4 people.
- 2 Shallots
- 1 Garlic clove
- approx. 650g Chicken fillet
- 2 Broccoli stumps
- 1 cup low-fat Milk
- 250g Chestnut mushrooms
- 2 large tablespoons Greek yogurt (fat free)
- 1 packet of Cheddar Cheese
- 150 grams Grated Cheese
- 1 pack Brown Rice
- Optional 1 tablespoon Mayonnaise (Hellmann’s)
The recipe.
I chop the shallots, cut the mushrooms into pieces and press the garlic. This is going in a large frying pan with a dash of olive oil, I use olive oil Olitalia, extra virgin.
I cut the chicken into pieces and put it into the pan with the shallots, mushrooms and garlic. For the flavor I add salt in the pan, some pepper is also delicious, but my kids aren’t so fond of pepper so I skip that.
Meanwhile, I preheat the oven to 180 degrees.
I cook the brown rice according to the package while I cook the broccoli al dente.
I add a dash of milk with the chicken, onion, mushrooms and garlic.
And 2 large spoons of Greek yoghurt, here you can optionally add a tablespoon of mayonnaise for a fuller flavor.
The cooked broccoli goes with it.
Everything goes into a baking dish where I‘ve done a little olive oil in.
On top of everything go some slices of cheddar cheese and on top of that some grated cheese.
After 20 minutes in the oven the dish is ready. Looks good, right?
I serve this dish with brown rice and last I add some extra grated cheese on each plate. Yummie!
When you skip the mayonnaise you not only put a delicious but also a healthy dish on the table. This casserole is full of protein from the chicken and Greek yogurt, broccoli is rich in vitamins as well as calcium and iron. Brown rice is full of fiber.
