Recipe. Curry of winter vegetables, sprouted seeds & quinoa.

(Main course – 4 people)

CURRY

• 1 teaspoon Biotona Curcuma
• 1 knife tip Biotona Ginger
• 4 tablespoon Biotona Coconut milk powder
• 4 tablespoon Biotona Super Sprouts
• 1 red onion
• 1 chili pepper
• 2 cloves of garlic
• 4 carrots
• 1 parsnip
• 1/2 butternut pumpkin
• pepper and salt
• 750 ml vegetable stock
• Some leaves of coriander

Peel the carrots, parsnip and butternut squash and cut into coarse cubes. Peel the onion and garlic cloves and finely chop. Put the vegetables, onion and garlic in a dash of olive oil and add the Biotona Ginger and Biotona Curcuma. Add the vegetable stock and Biotona Coconut milk and simmer for 20 minutes with the lid closed. Season with freshly ground pepper and pinch of salt, finish with Biotona SuperSprouts and a few coriander leaves.

QUINOA

• 300g Biotona Quinoa
• 4 tablespoon Biotona Hennepzaadjes
• 1 teaspoon Biotona Curcuma
• 1 cinnamon stick
• 1 shallot
• 1 clove of garlic
• 600ml vegetable stock 
• Juice and zest of a half lime

Chop the shallot and the garlic finely and sprinkle in olive oil. Rinse the Biotona Quinoa in a sieve under cold running water and add. Add the Biotona Curcuma and a cinnamon stick, pour the vegetable stock over it and let it cook gently for 10 minutes under the closed lid. Season with freshly ground pepper and salt at the end. Finish the quinoa with the Biotona Hemp seed, lime juice and zest. For garnish, add the finely chopped raisins and walnuts.
