The first recipe on my blog is a fact. When I’ve no inspiration for dinner and too little time for a recipe from a cookbook, I always grab pasta. You can endlessly combine pasta and on such a day I combine the pasta with what I feel like that day. I always make sure that there’s in any case always something of vegetables and meat or fish in it. This simple dish is very tasty and easy to prepare, ideal when you have little time but still want to put a good meal for yourself and / or your family on the table. Don’t like fish? This recipe is also delicious when you replace the salmon with chopped chicken.
What do you need?
This amount is enough for 4 people.
- 500 gram Pasta
- 325 gram skinless Salmon fillets
- 1 Shallot
- 1 clove of Garlic
- 250 gram (chestnut) Mushrooms
- 2 tablespoons Mascarpone
- 1 tablespoon Herb cheese
- 75 gram Lamb’s lettuce
- 80 gram Pine nuts
- 100 gram Cheese flakes
The recipe.
The pasta goes into the pot of boiling water, cook the penne until al dente. Meanwhile, I slice the mushrooms and shallots into small pieces, the garlic goes in the garlic press.
I do organic coconut oil in two fry pans.
In one fry pan go the mushrooms, onion and garlic. I used chestnut mushrooms because I find them fuller of flavor, but of course you can also use the normal white mushrooms. In another fry pan go the 2 salmon fillets.
I put some oil in the water of the pasta, so the pasta doesn’t stick together. The oil is from Olitalia, extra virgin.
I put some salt on the salmon fillets that I‘ve been made into small pieces.
I pour the pasta and add them into a large bowl.
I put 2 tablespoons of mascarpone in the warm pasta.
And 1 tablespoon herb cheese.
I toast the pine nuts.
Then I put the mushrooms, onion, garlic, salmon and pine nuts at the penne into the bowl and mix everything together.
Then I add some lettuce and cheese flakes and mix everything together well.
Some extra cheese flakes on top of the pasta and ready!
This dish you can fully customize to your own taste, you can choose other pasta, replace the lettuce by peas or spinach and add sundried tomatoes. Just add whatever you want (or what you have in your kitchen cabinets). Have a nice meal!
